Short definition
Inert fermentation and aging vessels that preserve pure fruit character without adding oak flavors.
Stainless steel tanks add nothing to the wine — no vanilla, no toast, no spice. That is the point. Winemakers choose steel when they want the grape variety and terroir to shine through unmasked. Sauvignon Blanc, Pinot Grigio, Albariño, and Muscadet are almost always fermented and aged in steel. The result is clean, bright, and fruit-driven.
