Short definition
A wine with little to no residual sugar, where fermentation has converted nearly all grape sugar into alcohol.
Dry does not mean bitter or harsh — it means the wine lacks sweetness. A Sauvignon Blanc can smell like tropical fruit and still be bone dry. Most red wines and many whites fall into this category. If a wine makes your mouth water rather than feel sugary, it is dry.
