Short definition
The ideal temperature range for drinking a wine, which dramatically affects how its aromas, flavors, and textures are perceived.
Temperature changes everything. A red served at actual room temperature (72°F/22°C) tastes flabby and alcoholic — aim for 60-65°F (15-18°C) instead. White wines straight from the fridge are too cold to smell — let them warm for 10 minutes. Sparkling wines need the most chill (40-45°F / 4-7°C). The quickest fix for any wine that tastes off: adjust the temperature before blaming the bottle.
