The flavors and textures experienced when wine is in your mouth, distinct from what you smell.
Your palate registers taste (sweet, sour, bitter, salty) plus texture and temperature. A wine might smell like ripe cherries but taste more like cranberry on the palate. Tasters evaluate attack (first impression), mid-palate (middle), and finish (aftertaste) as three phases of the palate experience.
