The overall smell of a wine, encompassing all its aromas and bouquet.
Tasters say "the nose" to mean everything you pick up by smelling the wine. Stick your nose right into the glass after a gentle swirl. Young wines show primary fruit aromas; older wines develop secondary scents like leather, tobacco, or dried flowers. Most of what we perceive as flavor actually comes through smell.
