After you swallow, pay attention. Does the taste vanish instantly or hang around for 30 seconds? A long finish — where flavors evolve and linger — usually signals a well-made wine. Cheap wines tend to drop off fast. Great Burgundy or Barolo can leave an impression for a full minute.
